max maxwell ’s tortilla

A surprising man favorite….. Cut a potato in rounds and fry them in e.v.o. until golden brown then remove excess oil on a kitchen paper    in a small teflon pan put one tbsp. of e.v.o. then place the potato to form a circle then pour egg mixture ( 3 eggs, half a cup of milk, salt, pepper and chopped spring onions) cook in both sides until golden brown    serve with a fresh herbs bouchet
