This is a great salad for the hot summer days :
Just arrange the watermelon, arugula leaves, pinenuts and greek feta cheese on a salad dish and dress it with a balsamic vinagrette.

it looks really fresh!
in italy, as you know, it’s so cold in the time … that we “must” (tarallucci&wine italian style) reduce one celtius grade the houses’ temperature, says the government … do you remember “the austerity” as in ’70s? :-(
i’m happy you can enjoy a warmer atmoshere :-)

mr Adventure Chef and I had a good time chewinging feta cheese, etc. last summer, and it was a rainy day!
