Panko-miso crusted tuna on peperonata

This a nippon-ici version of a dish from Siracusa -Sicily

Ingredients : 1 pc. yellow fin tuna fillet

For the crust : White miso paste; grated fresh ginger; chopped spring onions;E.V.O. ;freshly ground black pepper; panko (japanese bread crumbs)

For the peperonata : Red onions; capsicums; E.V.O., fresh mint

Mix he miso paste with ginger. olive oil,chopped onions and coat evenly the fish fillet then pass it in the panko and bake in oven until crust turns golden brown.For the peperonata sautee the onions in E.V.O. then add the capsicums(pre-grilled skin off) season with salt and pepper then remove from the fire and add the mint leaves. Place the peperonata on a serving plate and arrange the tuna fillet on top.

    Thanks Fordizucca its really good as japanese use to coat some fish especially for BBQ with miso paste and the contrast with mint (suppose to be “mentuccia romana” variety ) is really attractive.Try it …oishi !

    [...] “Pizza Connection” was  the ironic name of  a cosy, Italian beach-restaurant ran by Gino in Boracay Island. I was in the business for a while, working as a bartender. The construction was very small and basic: a wooden and bamboo hut with no electricity and running water. The signboard was bizarre; due to Gino’s satirical concept, it  depicted the character of a moustached man (supposedly a standard Sicilian man), painted upon a bright-yellow and sun-shaped frame… There were just five tables, located by the beach and under the shelter of some beautiful coconut trees. The crystal-clear sea and the gentle breeze blowing, made the setting fantastic! At least that was our customers opinion while devouring and growing fat  (particularly at dinner) Gino’s homemade pasta dishes and creative pizzas, at the very  dim light of  kerosene lamps… Among the customers were some friend of us, such as the elusive parsee Max and Mike, an English architect based in Hawaii, who once convincingly declared the “Pizza Connection” being among the best restaurants he had visited World round! I wonder but it’s a fact that the place was quite popular because of its ecological minimalism and location, and the chef ‘s legendary creativeness! • • •  [...]
