On the beach is good to have light meals for lunch as you want to be ready for water-sports and activities in the ocean. Here is a light tropical soup wich combines the seafood taste with the mildness of miso and the sharpness of verdicchio wine. The wasabi gives an exciting pungent retro taste.

Boil the potatoes with white onions and laurel then allow to cool and reduce into a cream using a cutter. Place then the cream in a serving bowl after seasoning with white miso and verdicchio wine. Place the wasabi in the side of the dish and sprinkle with red caviar . Complete with some drops of good olive oil .
