Sting ray in green curry with fern sprouts

Fern sprouts are called “paco” in the Philippines and in pilipino cuicine are cooked in coconut cream with pork . In my recipe I used some thai green curry paste and sting ray fillets to try the sea and river combination. It was really delicious.
Ingredients
Sting ray fillets, fern sprouts, fresh coconut milk or in can, lemon grass, grinded cashew nuts, thai green curry paste, nam pla (thai fish sauce), onion, garlic, ginger, coriander leaves, vegetable oil, finger chillies.
Procedure
Stir fry minced garlic, onion and ginger in vegetable oil then add the curry paste sautee for one minute then add the sting ray fillet and sautee for another minute. Add the fern sprouts, coconut milk,lemon grass,finger chillies and the nuts and cook for about twenty minutes . Season with the nam pla and finally away from fire sprinkle the coriander leaves . Serve with yasmine rice.
