Crudo di tonno in crosta di mollica alla anconetana e conserva di pomodori secchi.

E` un antipastino ideale per una cena a base di pesce. Vi occorre un pezzo di tonno fresco possibilmente pinna gialla ma va bene anche altro tipo di pesce come spada . Per la crosta amalgamare della mollica di pane con sale, pepe, aglio grattugiato e prezzemolo tritato.Bagnare quindi il filetto di pesce con dell`olio di oliva in modo da far aderire bene la mollica condita. Lasciare insaporire per mezzora e passare in padella antiaderente per pochi minuti in modo che l`interno del tonno rimanga crudo.
Per la conserva che puo` essere preparata in anticipo amalgamare dei pomodori secchi, olive nere, capperini e acciuga il tutto in evo.
Presentare il piatto tagliando delicatamente il tonno a fettine accompagnato da poca mistiganza e dalla conserva.

Sting ray in green curry with fern sprouts

Fern sprouts are called “paco” in the Philippines and in pilipino cuicine are cooked in coconut cream with pork . In my recipe I used some thai green curry paste and sting ray fillets to try the sea and river combination. It was really delicious.
Ingredients
Sting ray fillets, fern sprouts, fresh coconut milk or in can, lemon grass, grinded cashew nuts, thai green curry paste, nam pla (thai fish sauce), onion, garlic, ginger, coriander leaves, vegetable oil, finger chillies.
Procedure
Stir fry minced garlic, onion and ginger in vegetable oil then add the curry paste sautee for one minute then add the sting ray fillet and sautee for another minute. Add the fern sprouts, coconut milk,lemon grass,finger chillies and the nuts and cook for about twenty minutes . Season with the nam pla and finally away from fire sprinkle the coriander leaves . Serve with yasmine rice.

Gnocchi integrali ai tre pomodori e gamberetti.

Finalmente mi hanno riparato la digitale cosi` posso postare di nuovo qualche ricettina . Questa e` semplicissima ma molto appetitosa.
Per la salsa cuocere insieme a dell`olio di oliva aglio, pomodori secchi a striscioline, pomodori pachino , pomodori pelati, basilico, prezzemolo, un po` di sale e a piacere del peperoncino fresco. Separatamente sbollentare i gamberetti in acqua bollente e sale.Per gli gnocchi impastare le patate con della farina integrale , uovo, una grattatina di noce moscata e del parmigiano e tagliare gli gnocchi. Cuocere gli gnocchi in acqua salata e condirli con la salsa ai tre pomodori. Mettere i gamberetti sopra e decorare con del prezzemolo.

Adventure chef in Biliran island

Biliran island is situated north-east of Leyte eastern Philippines is a mecca for mountain bikers and nature lovers .Its a water world of streams, pools and astonishing waterfalls. It is surrounded by lovely white sanded islets . And the interior of the island with his volcanoes has beautiful rice terraces . I got there by an overnight ship from Cebu`city and start biking the next morning up to the mountains between refreshing streams .The first day I had the luck of the view of a fantastic raimbow over the rice terraraces in Iyutan one of the most charming villages in the interior of Biliran. I spend three great days on the bike exploring the island..it wasn`t enough ..next time I want to go back to this natural paradise.

Calamares and zucchini salad, red peppers cream.

Cut the calamares with a sharp knife in strings and the zucchini in tiny slices then steam using aromatic water. For the cream bake the sweet red peppers in oven, remove the skin then puree in blender with evo, fresh ginger, salt and pepper. Place the cream on the plate with the calamares and zucchini (previously dressed with citronette) . Garnish with green asparagus.

The bonito`s dive.

You can use any kind of fish just cut the head off and use the body with the tail. For the recipe I used a bonito wich is a small fish from the family of tuna fish. I chargrilled the fish with a condiment of evo, salt and pepper. For the eggplant caponata I sauteed onion and garlic in evo then added the chopped bell peppers then tomato, zucchini and eggplant .When almost done I added some toasted almond, pine nuts and a table spoon of balsamic vinegar then seasoned with anchovies and salt. Arranged in the plate the caponata to form a cilinder , the bonito head down to dive into it and garnished with some celery pesto.

Insalatina invernale

Le insalate sono tra i miei piatti favoriti .Questa ha un buon abbinamento di sapori piuttosto invernali. Ho usato della insalata mistiganza, del radicchio, capperi, mela verde, noci e germogli di alfa alfa.Come condimento una vinaigrette di balsamico. Semplicissima ma molto gustosa.

Orecchiette with sunflower seeds pesto.

I broke my camera so I took this pic with my cell phone sorry if the quality is not that great anyway the idea for the recipe is there and I ensure you it is a tasty one.

For the pesto place sunflower seeds, parsley,basil,pecorino cheese, garlic, chili, evo, salt and pepper and mash to obtain a paste .
When the orecchiette (I used my home made) are done sautee them with the pesto and sprinkle with minced parsley and extra pecorino if you like.

Rollatina di pizza.

Un altro modo per mangiare la pizza ? Arrotolarla. Prendete dell`impasto da pizza lo stendete con il mattarello , lo riempite con gli ingredienti che piu` vi piacciono e poi lo mettete nel forno. Per la mia rollatina ho usato carciofini sottolio, pomodori essiccati, formaggio feta, porro indorato in padella con evo e bufalina.
